When You Are Hot...

Here's an easy summer cooler. I used to drink this made from fresh coconuts when I lived on the Big Island of Hawaii, growing and selling organic tropical fruit. It was the perfect liquid antidote to the heat and humidity there, but works just as well here in the dry air of New Mexico, and probably where you are, too.

8 oz. Unsweetened, chilled coconut water (not coconut milk)
Juice of ½ -1 lime
Vary amounts of each to your taste

Pour over ice in a tall glass.

There's a lot of hype about coconut water, and regular water will quench your thirst just as well. Coconut water has plenty of potassium, and with a Vitamin C squeeze of citrus juice, seems to me to be a better alternative to soda or tea with sugars. I drink it because I like the taste, so if it appeals to you, give it a try.
